The 2021 season saw the end of the drought for us. The vines responded well to the replenishing rain and produced some outstanding fruit. This Merlot was picked prior to much of the drought breaking rain. It shows ripe cherries and red berries with bright crimson hues. Ageing in older French and American barriques contributes structure with minimal oak flavour input. Delicious now and given good conditions will suit short term cellaring. Serve with Swiss brown mushrooms, grilled haloumi, eggplant and dried tomato, wrapped in proscuitto with truffle and parsnip mash.
