2023 Barrel Ferment Sauvignon Blanc


A  classic Fume Blanc style made from Sauvignon Blanc from the Wyberba Valley. Nine months in French oak produces a creamy, complex mid palate unseen on unwooded wines from this variety.

The quality of this fruit, sourced from Girraween Estate, prompted us to have a crack at the classic French Fumé Blanc style. The grapes were hand picked, then basket pressed. The juice settled overnight then racked to two French barriques, one new and one seasoned. Different yeasts were used in each barrel. The wine spent 9 months on lees post ferment with no malo. This method builds layers of flavour and complexity giving a full rich palate. Balance is provided by juicy fresh acidity. Fresh pineapple combines with hints of citrus and fresh herbs.
