2019 brought a dry spring with no rain to follow. The vines responded well and produced some outstanding fruit. The Shiraz from this vintage was picked in two separate picks 8 days apart. This practice is not unusual for us as we then blend the two picks and bottle the wine as a whole. However this year we have bottled them separately with the second pick being noticeably riper with more dark fruits and hints of vanilla caramel oak.
This wine is hand plunged in open fermenters before being basket pressed and racked into barrels to complete the malolactic fermentation.
12 months maturation in seasoned French oak allows the fruit to shine.
Great drinking now. This wine will show its best if decanted.
Enjoy! Serve it with garlic and thyme rib roast.
